Serves/Makes:1 9 x 13 inch pan

Ingredients
  • Coffeecake:
  • 2 cups (475 ml) flour
  • 1 cup (225 ml) sugar
  • 1/2 cup (125 ml) brown sugar
  • 1 tsp (5 ml). baking soda
  • 1 tsp (5 ml). baking powder
  • 1/2 tsp (2 ml). salt
  • 1 tsp (5 ml). cinnamon
  • 1 cup (225 ml) buttermilk (1 tbsp (15 ml). vinegar plus milk to equal 1 cup)
  • 2/3 cup (150 ml) shortening
  • 2 eggs
  • Topping:
  • 1/2 cup (125 ml) brown sugar
  • 1/2 cup (125 ml) chopped nuts
  • 1 tsp (5 ml). cinnamon
  • 1/2 tsp (2 ml). nutmeg
Preparation
  • Grease and flour bottom of 9x13 inch pan.
  • In a bowl combine all cake ingredients.
  • Beat 3 minutes at medium speed.
  • Pour into pan and top with crumb mixture.
  • Cover and refrigerate overnight.
  • Bake 30-40 minutes at 350 degrees (175 C.).
