Ingredients
  • 1 9-inch deep-dish graham cracker pie crust
  • 3 large eggs
  • 2 8 oz (224 grm). packages cream cheese, softened
  • 2/3 cup (150 ml) granulated sugar
  • 16 oz (448 grm). thick sour cream
  • 1 tsp (5 ml) pure vanilla extract
  • 1/4 cup (60 ml) key lime juice
  • whipped cream
  • sliced lime, mint leaves or fresh berries, for garnish
Preparation
  • In a large mixing bowl, beat the eggs until lemony.
  • Add the cream cheese, sugar, sour cream, vanilla, and key lime juice and continue to beat until smooth and creamy.
  • Pour into pie crust and bake at 350 degrees (175 C.) for about 60 to 70 minutes.
  • Allow to chill in the refrigerator for several hours before serving.
  • Top with fresh whipped cream, or with thin slices of lime, some mint sprigs, and/or some fresh berries.

  • Easy, delicious and light dessert idea.. goes great with mexican meals. I ran out of key lime juice once and substituted regular lime juice.. works just as well!

Comments
Raspberries are especially nice with key lime. Make a Raspberry Coulis and drizzle it over the slices for a spectacular presentation and fabulous taste.
