Carrot Cake & Cream Cheese Frosting

  • Carrot Cake:
  • 4 eggs
  • 2 cups (475 ml) sugar
  • 1-1/2 cups (350 ml) oil
  • 2 cups (475 ml) flour
  • 2 tsp (10 ml). baking soda
  • 2 tsp (10 ml). salt
  • 2 tsp (10 ml). cinnamon
  • 4 cups (950 ml) grated carrots
  • 1 cup (225 ml) nuts (optional)
  • Cream Cheese Frosting:
  • 1/2 cup (125 ml) soft butter
  • 8 oz (224 grm). cream cheese (softened)
  • 3 tsp (15 ml). water
  • 2 tsp (10 ml). vanilla
  • 3 cups (700 ml) icing sugar or powdered sugar
  • Carrot Cake:
  • Mix all ingredients together.
  • Bake in greased 9 1/2 inch by 13 inch pan at 350 degrees (175 C.) for 45 minutes.
  • Let cake cool before frosting.
  • Cream Cheese Frosting:
  • Mix all ingredients until smooth.
  • Spread over cooled carrot cake.
Carrot cake freezes well.
