Roasted herb potatoes


Serves/Makes:2 or more

  • 2 large white potatoes
  • 1 tbsp (15 ml) olive oil
  • thyme (to taste)
  • rosemary (to taste)
  • Heat oven to 400 degrees (200 C.).
  • Cut potatoes into 1/2 squares.
  • Mix potatoes, oil, thyme and rosemary in non-stick casserole pan.
  • Cook in heated oven for 30 minutes or until golden brown.
  • Toss often to brown evenly.
