Serves/Makes: 1 bundt or tube cake

  • 1 cup (225 ml) milk
  • 2 tbsp (30 ml). margarine or butter
  • 2 cups (475 ml) sugar
  • 2 cups (475 ml) flour
  • 1/2 tsp (2 ml). salt
  • 2 tsp (10 ml). baking powder
  • 2 tbsp (30 ml). vanilla
  • 4 eggs
  • 1 large tube cake pan, well greased and dusted with flour.
  • Preheat oven to 350 degrees (175 C.).
  • Put milk and butter into a small pot and set aside.
  • Sift sugar into a bowl and set aside.
  • Sift flour into a bowl, then add the salt and the baking powder.
  • With a wire whisk, mix the ingredients well together. Set aside.
  • In large bowl, beat 4 eggs until fluffy, then blend in the vanilla.
  • Mix well.
  • Add sugar.
  • Mix until smooth.
  • Add flour mixture.
  • At medium speed, blend until smooth.
  • Heat milk and butter or margarine.
  • Bring to boiling point. (Until bubbles form around edge).
  • Add milk mixture to batter.
  • Mix until smooth.
  • Pour batter into tube pan.
  • Bounce pan a couple of times to remove air bubbles. Place pan in center of oven.
  • Bake 45 minutes at 350 degrees (175 C.).
  • When finished, set aside and let cool. Then place on wire rack to finish cooling.
