Crumbled Blue Cheese Vinaigrette

Serves/Makes:1/2 c. or more

  • 1/4 cup (60 ml) wine vinegar
  • 1/4 cup (60 ml) olive oil
  • 2 tsp (10 ml) Dijon mustard
  • 2 tsp (10 ml) minced garlic
  • salt & pepper
  • 1 tbsp (15 ml) thyme or basil leaves
  • crumbled bleu cheese
  • honey roasted pecans
  • rice noodles for extra crunch (optional)
  • Blend all ingredients, except cheese, pecans and noodles.
  • Add remaining ingredients and toss with salad.
