Spinach Salad with Orange Viniagrette

  • 3 cups (700 ml) fresh spinach leaves
  • 5 tbsp (70 ml) orange juice
  • 1 tbsp (15 ml) red wine vinagar
  • 1 tbsp (15 ml) olive oil
  • 3/4 cup (175 ml) sliced mushrooms
  • 1/4 cup (60 ml) diced red onion
  • salt
  • pepper
  • Put spinach, mushrooms, and onion in a bowl set aside.
  • Take a shaker and shake the rest of the ingredients together.
  • Toss all together in the bowl.
Very delicious, healthy salad to go with a meal or by itself.
