Cranberry Cake - Lemon Icing for Cranberry Spice Cake

  • 2-1/3 cups (550 ml) sifted confectioners' sugar
  • 1/4 tsp (1 ml) salt
  • 1 lemon juice
  • 1/4 cup (60 ml) granulated sugar
  • 1/2 cup (125 ml) shortening
  • 1 tbsp (15 ml) grated lemon rind
  • Mix confectioners' sugar, salt and egg.
  • Boil lemon juice and granulated sugar together for 1 minute.
  • Add shortening and lemon rind.
  • Beat all ingredients together until creamy.
  • Spread on cooled cake.
