Serves/Makes:1 loaf
- Ingredients
- Batter:
- 4 cups (950 ml) blueberry muffin mix
- 1-1/2 cups (350 ml) plus 2 tbsp (30 ml) water
- Filling:
- 8 oz (224 grm) cream cheese
- 1/2 tsp (2 ml) almond extract
- 1/4 cup (60 ml) sugar
- 1 tsp (5 ml) lemon juice
- 1 egg
- Streusel:
- 1/4 cup (60 ml) butter
- 1/4 cup (60 ml) flour
- 1/4 cup (60 ml) sugar
- 1/4 cup (60 ml) chopped nuts
- 1 tsp (5 ml) cinnamon
- Preparation
- Bread:
- Mix water with blueberry muffin mix.
- With an electric mixer, cream together the filling ingredients.
- Pour half of the batter into a large greased loaf pan.
- Spread the cream cheese filling over the bread mix in the pan.
- Pour rest of the bread batter on top of the filling.
- Streusel:
- Melt butter and mix the rest of the streusel ingredients together with it.
- Sprinkle the top of the batter with streusel topping.
- Bake in a 375 degree (200 C.) oven for 35-45 minutes.
- Serve cooled.
