Meatloaf with a kick

Serves/Makes:6 servings

Ingredients
  • 6 oz (168 grm). pkg. garlic seasoned croutons
  • 1/2 tsp (2 ml). ground black pepper
  • 1/2 tsp (2 ml) cayenne pepper
  • 1 tsp (5 ml). chili powder
  • 1 tsp (5 ml). dried thyme
  • 1/2 onion, finely chopped
  • 1 carrot, finely chopped
  • 3 cloves garlic, minced
  • 1/2 red bell pepper, finely chopped
  • 1 lb (.5 kg). ground chuck
  • 1 lb (.5 kg). ground sirlion
  • 1-1/2 tsp (7 ml). kosher salt
  • 1/2 cup (125 ml) catsup
  • 1 tsp (5 ml). ground cumin
  • dash of Worcestershire sauce
  • dash of hot pepper sauce
  • 1 tbsp (15 ml) honey
Preparation
  • Heat oven to 325 degrees (175 C.).
  • In a food processor combine croutons, black pepper, cayenne pepper, chili powder, and thyme until fine.
  • Add carrot, onion, garlic, and bell pepper and pulse to combine.
  • Add meat to mixture with egg and salt and pepper. Mix throughly but avoid squeezing the mixture.
  • Pack mixture loosely into a loaf pan and place in oven.
  • Bake to an internal temperature of 155 degrees (70 C.).
  • Combine catsup, pepper sauce, and honey and brush glaze into to the meatloaf after 10 minutes of cooking.
Comments
This is a great recipe to experiment with the seasonings. Serve with garlic mashed potatoes and green beans for a complete dinner.
